How often do I have to have my grease trap pumped?
- Depending on the size of the trap and the volume of food solids, fats, oils and grease produced by the cooking facility, traps must cleaned regularly to avoid overflow. Business owners should consult the City of San Diego’s Wastewater Management Department (FEWD) to ensure frequency compliance

How a Grease Trap Works:

- A grease trap or interceptor prevents food solids and grease from entering the sanitary sewer system
- Wastewater and food solids from the cooking facility enter the trap which acts as a holding tank
- As the wastewater cools, the food solids harden and settle to the bottom of the trap while the lighter fats, oils and grease float to the top
- The wastewater is forced out to the sanitary sewer and the food solids, fats, oils and grease remain in the trap and increase in volume daily
Grease Trap Maintenance Information
- Schedule regular grease pumping services to ensure the proper removal and disposal of accumulated fats, oils, grease and solid food waste
- Depending on the size of the trap and the volume of food solids, fats, oils and grease produced by the cooking facility, traps must cleaned regularly to avoid overflow. Business owners should consult the City of San Diego’s Wastewater Management Department (FEWD) to ensure frequency compliance
- Avoid using bacterial products in your grease trap which may ‘fluff up’ the grease and in turn take up more space in the trap or interceptor
- Enzyme products are NOT allowed to be used in your grease trap or interceptor. They keep grease and oil suspended in water, which causes them to pass through the grease trap or interceptor. Enzyme products may also contribute to the corrosion of your grease trap or interceptor
